7 recipes for Christmas baking: Christmas cake, gallery, panettone

No winter evenings busy with long walks outside. Instead, spend a lot of time creating comfort at home. Decorate the house for Christmas, make toys for the Christmas tree, cook something delicious. For example, fragrant Christmas cakes. If you have just decided to take the last item on the list – we have prepared a selection of cool recipes for you. We tell you how to prepare traditional holiday cakes of Italians, Austrians, Germans. And what ingredients can be used to prepare a simple and delicious dessert for Christmas.

Recipe № 1: English beer cake

We need: 200 g of butter, 300 g of raisins and 1 orange. 100 g of dates and assorted candied fruits, 3 eggs and 300-350 g of sifted flour, 1 teaspoon of baking soda or baking powder, 2 teaspoons of spices to your taste: ginger, cinnamon, cardamom, etc. Also, you need 200 g of sugar and 300 ml of dark beer.

Take a small saucepan, mix butter, chopped dried fruits and candied fruit, sugar and beer. Peel a squash, grate it and squeeze the juice. Add it to the pan. Put it on low heat and bring to a boil. Cook on low heat for another 15 minutes, then allow to cool slightly so that the mixture is still warm, but no longer hot.

Flour should be sifted, mixed with soda and all the spices, then add the beaten eggs. Put everything in a saucepan and knead the dough.

Turn on the oven to preheat to 160 degrees. Cover the baking dish with warm oil and cover with parchment paper, pour the dough into it. You can sprinkle the dough with nut crumbs on top. For example, hazelnuts or almond flakes.

Bake the cake for approximately 1.5 hours, then cool and remove from the pan. Allow the dessert to cool completely before packing. You can wrap the cold cake in foil and put it in a dry container – so the dessert can be stored for 3-4 weeks!

Recipe № 2: Austrian sweet bagels

Austrian alternative to gingerbread cookies! For bagels you need: 200-250 g of sifted flour and 300 g of butter, 150 g of powdered sugar and 70 g of sugar. Also, 2 teaspoons of vanilla sugar and a pinch of salt, 150 g of almonds, 2 egg yolks.

(Flour) should be mixed with salt and almonds, broken into small crumbs. Grind this flour with egg yolks, sugar, vanilla sugar, butter. Knead the dough and put it in the fridge for 1-2 hours.

Preheat the oven to 180 degrees, place the bagels on a baking sheet lined with parchment paper. To make them – just make a thin layer of dough, cut into strips and roll them. Bake for about 20 minutes.

While the bagels are still hot, cover them with butter and then powdered sugar mixed with vanilla sugar. Allow the dessert to cool and sprinkle with icing again. Sweets should also be stored in a dry container.

Recipe № 3: The famous panettone

To prepare the famous Italian dessert, we need: 5-6 cups of flour and 200 g of butter, 2 whole eggs and 5 egg yolks, 150 g of candied fruits and raisins, strong alcohol (rum, cognac or other of your choice). Also, vanilla extract and brown sugar 1 tsp, a pinch of salt and 50 g of live yeast (not dry). Almond flakes for decoration and a little more oil to cover the form.

Fill candied fruits and raisins with alcohol and leave to infuse overnight. Then dry the ingredients and roll them in flour to keep the form in the dessert.

In a bowl, mix half a glass of warm water and yeast, 5 tablespoons flour. Cover this mixture with a towel and leave in a warm place for 2-3 hours. Then, add half a glass of water, the same amount of flour and leave to infuse again.

Take all the flour, make a hole in the middle. Pour sugar into the hole, pour in the yolks and whole eggs. Melt and pour in the oil, add salt. On top of that, move the dough and knead the dough from these ingredients. It is better to do it by hand, laying out all the components on a clean table surface.

Knead thoroughly and for a long time so that not only all the components are mixed, but also the dough absorbs oxygen . The mixture will be ready when it becomes elastic and easy to peel off from your hands. Then – it’s time to add raisins with candied fruit.

For baking, you can take one very large form, two medium or three small – your choice. Cover them with oil, spread the dough on the floor of each form, cover with towels and leave to rise in a warm place. This will take 2.5-3 hours until the dough has doubled.

Preheat the oven to 210-220 degrees and cut the dough on top with a thin knife. Bake for 10 minutes so that the dough cracks well on top, sprinkle it with nuts. And then reduce the heat to 170 degrees. Bake for another 40-50 minutes, until the cake gets a ruddy crust. Cool and remove the dessert. You can sprinkle it with powdered sugar or spread it with orange syrup.

Recipe № 4: German gallery

Stollen is a traditional German pastry, for which you do not have to go to Dresden or Munich for a long time. After all, it is known and loved to cook all over the world. Yes, not everyone will cook it properly! Exposure is required: after cooking, the dessert is infused for another 2-3 weeks. Hurry up and prepare it now to have a special dessert for Christmas.

What do you need? Take: 250 g of sugar and greasy soft cheese (homemade, so as not to be grainy). Good butter, 350 g and 2 large eggs, 600 g of sifted flour, 150 g of almonds and candied fruit, 200 g of raisins. Also, you need rum and salt, powdered sugar for powder, juice and zest of 1 lemon, a bag of baking powder, 20 g of vanilla sugar.

Rum should be poured raisins in the evening. In the morning, drain the remnants of rum (you can add to the dough), and raisins roll in flour. Nuts – beat in a blender into small crumbs. Butter – first beat thoroughly with sugar, then add eggs.

Grate the cheese and add to the eggs. There is also vanilla sugar, lemon zest and juice. The flour should be sifted again before kneading the dough. Add baking powder and mix with the already prepared ingredients.

Mix the dough with nuts, candied fruits and raisins. From it on a deck covered with parchment, 2 long loaves, similar in shape to a loaf. Use a knife or spoon to make small indentations in them. Bake for about an hour at 175 degrees.

Remove the dessert from the oven and, while it is still hot, pour a lot of butter. Then, sprinkle with a thick layer of powdered sugar. Once the cake has cooled, repeat this procedure again. Wrap two desserts in foil and leave in a cool dry place for 2-3 weeks. A well-infused gallery will be much tastier than if you ate it right away.

Recipe № 5: A simple Christmas biscuit

And now – let’s move on to extremely simple recipes that will help to prepare dessert quickly. For the biscuit we need: 4 eggs, 1 cup sifted flour and 1 cup sugar, 100 g butter. Also, 50 g powdered sugar, 1 orange, ginger root, cinnamon and nutmeg. Still, you will need 300 g of a mixture of all kinds of dried fruits and nuts to your taste. Take 70 ml of cognac or other strong alcohol, 1 apple. Salt and soda – 1/4 teaspoon.

(Proteins and yolks should be separated, flour mixed with salt and soda. Yolk and grind with sugar and warm butter, and beat the whites into a stiff thick foam. Peel the apples from the middle and peel, cut into small cubes. Also, finely chop the dried fruit and nuts.

Peel an orange and squeeze the juice. Mix the juice with alcohol and powdered sugar, add a little water and boil in a saucepan, let cool.

Knead the dough from the grated yolks, proteins and flour. Mix the apple with the grated ginger, all the spices and orange peel. Add all this to the dough, along with half of the dried fruits and nuts. Pour into a round shape and bake for 25 minutes at 170 degrees. Then, pour over the biscuit the second part of the dried fruit with nuts and bake for another 15 minutes at 180 degrees. When the biscuit has cooled down a bit, pour orange syrup over it.

Recipe № 6: Baked apples with honey and nuts

A simple recipe for which you don’t even have to make dough. Take a pack of 200 g shortbread cookies, 150 g butter and 200 g dates. Some 8 apples, 200 g of walnuts and 100 g of honey, 1 lemon and spices: cinnamon, dried ginger, nutmeg.

Divide the apples in half and make a hole in the middle. Beat the cookies in the sand. Soak the dates in boiling water for 10 minutes, then drain the water and puree them. Mix date paste with cookies. Add butter and spices, juice of half a lemon.

Chop walnuts into crumbs. Mix with honey, cinnamon and ginger, lemon zest and 2-3 tablespoons of lemon juice. Fill the halves of the apples with the date mixture, and sprinkle with nuts and honey on top. Transfer to a baking sheet lined with parchment paper and bake until the apples are soft. This is approximately 20 minutes at a temperature of 190 degrees.

Recipe № 7: Nuts with spices

Undoubtedly, the simplest and fastest recipe of the selection. Everything you need: 500 g of assorted nuts, 100 g of honey, and many spices: cinnamon, dried ginger, nutmeg, vanilla and more. You can also add 1 orange.

Peel an orange and squeeze the juice. Mix half of the juice, zest and all spices with honey. Add more juice if the honey is very thick. A viscous syrup should come out.

Put all the nuts on a baking sheet and bake in the oven at 170 degrees until golden. Transfer the still hot nuts to a deep bowl and mix with the honey syrup. Allow the dessert to cool so that the syrup turns into a spicy crust. Such nuts can be eaten for tea, or packaged in portions and given as a holiday souvenir.
