Quick & Easy Scrambled Eggs

Every egg counts! At Sunny Queen Farms, we value all eggs, which naturally come in different shapes and sizes. Instead of wasting those that don’t fit into the carton, we repurpose them into our delicious Free Range Ready-to-Pour Egg Mix so no egg is left behind.



Ingredients

  • 2 ripe avocados
  • Salt & pepper
  • 500g Sunny Queen Farms The Odd Eggs
  • Ready-to-Pour Egg Mix
  • 4 slices thick-cut sourdough or favourite bread
  • ½ tbsp extra-virgin olive oil
  • ½ tbsp lemon juice
  • Chilli flakes, salt & pepper, for seasoning

Method

  • Mix avocado with sea salt, pepper and lemon juice until combined.
  • On medium heat, pour the egg mix into a frying pan, and move around, scraping pan gently with a spatula to scramble.
  • Meanwhile, toast your bread.
  • Lightly drizzle the bread with extra virgin olive oil.
  • Add avocado and eggs on top.
  • Sprinkle with chilli flakes and garnish with salt and pepper.
