Remember that even though Sauron lost at Minas Tirith, the attack on Mordor was considered by all to be a suicide mission, just to give Frodo a chance to get to Mt. Doom.

If the ring wasn’t destroyed, Sauron would continue on and in all likelihood would have won the war.
